Green Pea Soup with Thyme

Super quick, easy and inexpensive pea soup!

Ingredients:

  • 1 onion
  • 2 cloves of garlic
  • 600 gr frozen peas (3 cups)
  • 8 dl water (3 ½ cups)
  • 1 broth cube
  • 1 tsp. thyme
  • 1 ½ tsp. smoked paprika
  • 2,5 dl plant-based cooking cream (1 cup)
  • Salt (to taste)
  • Pepper (to taste)

Side-note: Peas are a good source of vitamin A, B, C and E, zinc and coumestrol.

Directions:

  • Chop your onion and garlic and place in a big pot with oil on medium heat till soft.
  • Add your spices and let roast for a minute before adding your peas. Now add your broth and let simmer for 5 minutes.
  • Add cream and blend till smooth.
  • Add salt and pepper to taste.
  • Enjoy!

Side-note: add your favorite toppings such as roasted pine nuts or almonds, some fresh parsley or basil and remember a delicious side of your favorite bread!
